Cassis is the recipient of many Calgary Restaurant awards and, for the past two years, was selected as one of the Top 100 Restaurants in Canada.
Chef Dominique Moussu is the Executive Chef and Managing Partner of Suzette. Originally from Brittany, France, Chef Moussu attended Brevet d'Etudes Professionelles. His career took him all over Europe, cooking in top luxury hotels including The Savoy in London. Moussu was the Executive Chef and Managing Partner at TEATRO and was among the first to bring the flavours of France to Calgary with L’Episerie. He is also the Executive Chef and Managing Partner of Cassis. Chef is excited to offer you a taste of the flavours of Brittany.
Gilles Brassart is Owner/Operator of Cassis Bistro and Suzette • Brittany Bistro • and was born near Aix-en-Provence in the south of France. After a couple of successful restaurant ventures in San Francisco, Gilles and his wife, Co-owner/Operator Andrea Brassart, settled in Calgary in 2008.
Jean-Philippe Charpentier is Head Chef at Suzette. Chef Charpentier is from the South of France where he trained and worked extensively in the local food scene for 10 years. After arriving in Calgary in 2011, he worked as Head Chef at Cassis, mentoring with Chef Moussu.
